- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 3 cloves fresh garlic, minced
- 2 cups mixed vegetables (fresh or frozen)
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup shredded cheddar cheese
- 1 cup seasoned breadcrumbs
Instructions
- Preheat your oven to 350°F (175°C).
- Dice the chicken breasts into bite-sized pieces.
- In a skillet over medium heat, sauté minced garlic in olive oil until fragrant (about 1 minute).
- Add mixed vegetables and sauté until crisp-tender (approximately 5 minutes).
- In a large bowl, combine sautéed vegetables, diced chicken, cream of mushroom soup, and half of the shredded cheddar cheese.
- Pour the mixture into a greased baking dish and spread evenly.
- Top with breadcrumbs and remaining cheddar cheese.
- Bake for 30-35 minutes until bubbly and golden brown.
