Ingredients
- 4 cups mixed greens (arugula, spinach, romaine)
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 3 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- Salt & pepper to taste
Instructions
- Wash mixed greens thoroughly and pat dry.
- Halve the cherry tomatoes and slice the cucumber into rounds.
- Soak thinly sliced red onion in water briefly to reduce sharpness.
- In a large bowl, combine mixed greens, tomatoes, cucumber, onion, and feta cheese. Toss gently.
- In a small bowl or jar, whisk together olive oil and balsamic vinegar with salt and pepper; adjust seasoning to taste.
- Drizzle dressing over the salad just before serving and toss gently again.
