Ingredients

  • 4 cups mixed greens (arugula, spinach, romaine)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • Salt & pepper to taste

Instructions

  1. Wash mixed greens thoroughly and pat dry.
  2. Halve the cherry tomatoes and slice the cucumber into rounds.
  3. Soak thinly sliced red onion in water briefly to reduce sharpness.
  4. In a large bowl, combine mixed greens, tomatoes, cucumber, onion, and feta cheese. Toss gently.
  5. In a small bowl or jar, whisk together olive oil and balsamic vinegar with salt and pepper; adjust seasoning to taste.
  6. Drizzle dressing over the salad just before serving and toss gently again.
