- 3 cups boneless, skinless chicken breasts (diced)
- 2 tbsp olive oil
- 1 cup onions (chopped)
- 3 garlic cloves (minced)
- 4 cups low-sodium chicken broth
- 1 cup heavy cream (or whole milk)
- 1 cup carrots (diced)
- 1 cup celery (diced)
- 2 tsp fresh thyme
- 1 tsp black pepper
Instructions
- Prep your ingredients: Chop veggies and dice chicken.
- Sauté aromatics: In a large pot, heat olive oil over medium heat. Add onions and garlic, cooking until translucent.
- Add chicken & veggies: Stir in diced chicken, carrots, and celery. Cook until chicken is white on all sides (about 5 minutes).
- Pour in broth: Add chicken broth and bring to a simmer, stirring occasionally.
- Add cream & seasonings: Once simmering, stir in cream (or milk), thyme, and pepper. Cook for an additional 10 minutes until thickened.
- Serve & enjoy: Ladle into bowls and garnish with fresh herbs if desired.
