- 4 medium Russet potatoes (about 2 lbs), peeled and cubed
- 1 medium sweet onion, finely diced
- 3 cloves garlic, minced
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups beef broth (homemade or store-bought)
- 1 cup shredded cheese for topping (optional)
Instructions
- Begin by gathering all ingredients. Dice onions and mince garlic. Peel and cube potatoes into bite-sized pieces.
- Heat oil in a large skillet over medium heat. Sauté onions and garlic until translucent (about 3 minutes).
- Increase heat slightly and add ground beef. Cook until browned, breaking it apart with a spatula.
- Add cubed potatoes, paprika, salt, and pepper; stir well to combine.
- Pour in beef broth, cover, and simmer on low heat for about 20 minutes or until potatoes are fork-tender.
- If desired, sprinkle cheese on top during the last few minutes of cooking until melted.
