- 1 lb lean ground beef
- 4 medium Russet potatoes, diced
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 cup low-sodium beef broth
- 2 tsp paprika
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 cup grated cheddar cheese (optional)
Instructions
- Prepare your ingredients by dicing the onion and garlic.
- In a large skillet over medium heat, add olive oil and sauté the onion until translucent (3-4 minutes).
- Increase heat and add ground beef; cook until browned (6-8 minutes), breaking it apart as it cooks.
- Stir in the diced potatoes and minced garlic; cook for an additional 5 minutes.
- Pour in beef broth along with spices; cover and simmer on low heat for 20-25 minutes until potatoes are tender.
- If desired, sprinkle cheddar cheese on top in the last few minutes of cooking to melt.
