- 1 cup bell peppers, diced (mixed colors)
- 1 can (14.5 oz) diced tomatoes (fire-roasted if preferred)
- 2 tsp olive oil
- 1 tsp oregano
- 1 tsp cumin
- 1 tsp chili powder
- 1 cup shredded cheese (optional)
Instructions
- Prep your ingredients by chopping the onion and bell peppers.
- Heat olive oil in a large skillet over medium heat. Sauté onions until translucent (about 3-4 minutes), then add minced garlic for an additional 30 seconds.
- Add ground beef to the skillet, breaking it apart with a spatula. Cook until browned throughout (about 5-7 minutes).
- Stir in diced bell peppers and spices; cook until veggies soften (around 3-4 minutes).
- Pour in canned tomatoes and stir well; let simmer on low heat for about 10 minutes.
- If using cheese, sprinkle over the mixture before serving; allow it to melt slightly under the lid.
