Instructions
- Preheat your oven to 400°F (200°C). Season chicken breasts with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken for about 5 minutes on each side until golden brown.
- Add minced garlic and sauté for 30 seconds until fragrant.
- Pour in chicken broth and bring to a gentle simmer. Gradually stir in heavy cream and let cook for about 5 minutes until slightly thickened.
- Add vegetables and fold them into the sauce. Cook for an additional 3-5 minutes until tender.
- Nestle the seared chicken back into the skillet, cover, and simmer for another 10-15 minutes until fully cooked through.
