- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 1 cup bell peppers (red or yellow), chopped
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup shredded cheddar or mozzarella cheese
- 2 tsp cumin
- 2 tsp chili powder
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Chop onions and bell peppers; gather all ingredients.
- Heat olive oil in a skillet over medium heat. Add onions and bell peppers; cook until softened (about 5 minutes).
- Increase heat; add ground beef and cook until browned (7-10 minutes). Break into crumbles as it cooks.
- Stir in garlic, cumin, and chili powder; cook for 1 minute until fragrant.
- Add diced tomatoes with juices, salt, and pepper. Let simmer on low for 10-15 minutes.
- Preheat oven to 350°F (175°C). Transfer mixture to an oven-safe dish; sprinkle cheese on top. Bake until melted (10-15 minutes).
