- 1 bell pepper (chopped)
- 2 cups fresh spinach
- 2 tbsp olive oil
- 1 tsp cumin
- 0.5 tsp paprika
- Optional: cheese for topping
Instructions
- Preheat the oven to 375°F (190°C).
- Cook quinoa according to package instructions (about 15 minutes).
- In a pan, heat olive oil over medium heat and sauté chopped bell pepper for about 5 minutes.
- Add drained black beans, cumin, and paprika; stir until heated through (about 3 minutes).
- Mix in cooked quinoa and fresh spinach; cook until spinach wilts.
- Transfer to a baking dish, top with cheese (if desired), and bake for 15-20 minutes until golden brown.
