- 1 cup mixed vegetables (bell peppers, zucchini, spinach), chopped
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh herbs (basil or parsley) for garnish
Instructions
- 1. Prep Your Ingredients: Gather all ingredients. Mince garlic and chop vegetables.
- 2. Cook Pasta: Boil salted water in a large pot. Add pasta and cook until al dente (about 8-10 minutes). Reserve ½ cup cooking water before draining.
- 3. Sauté Aromatics: In a pan over medium heat, warm olive oil. Add minced garlic and sauté for 30 seconds before adding chopped vegetables; cook until tender.
- 4. Combine Ingredients: Toss the drained pasta into the pan with sautéed veggies. Add reserved pasta water gradually for a creamier texture.
- 5. Add Cheese & Seasonings: Sprinkle grated Parmesan over the mixture while tossing everything together. Season with salt and pepper to taste.
- 6. Serve: Plate hot and garnish with fresh herbs before serving.
