- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 2 tbsp extra virgin olive oil
- 2 tsp smoked paprika
- 1 tsp ground cumin
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Lightly spray a baking dish with nonstick cooking spray.
- In a bowl, mix salt, pepper, paprika, and cumin.
- Rub chicken breasts with olive oil and coat evenly with the spice mixture. Let marinate for 15 minutes.
- Place chicken in the prepared baking dish and squeeze lemon juice over it. Bake for 25-30 minutes or until the internal temperature reaches 165°F (75°C).
- Allow the chicken to rest for 5-10 minutes before slicing and serving.
