- 1 lb lean ground turkey
- 1 medium sweet onion, chopped
- 3 cloves garlic, minced
- 1 cup bell peppers, diced (various colors)
- 2 tsp cumin
- 1 tsp paprika
- ½ tsp black pepper
- 2 tbsp fresh parsley or cilantro, chopped
- 2 tbsp extra virgin olive oil
Instructions
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent (about 5 minutes).
- Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until no longer pink (7-10 minutes), seasoning with salt and pepper.
- Stir in the diced bell peppers and minced garlic; cook for another 3-4 minutes until the peppers soften slightly.
- Sprinkle spices over the mixture and stir well, allowing the aromas to meld together.
- Fold in fresh herbs before serving hot over rice, in wraps, or stuffed in peppers.
