Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups fresh broccoli florets
  • 1 cup diced bell peppers (mixed red and yellow)
  • 1 medium zucchini, sliced
  • 3 tbsp extra virgin olive oil
  • 2 tsp garlic powder
  • 1 tsp dried herbs (oregano or thyme)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine chicken breasts with 2 tablespoons of olive oil, garlic powder, salt, pepper, and dried herbs. Toss well to coat.
  3. In another bowl, toss broccoli, bell peppers, and zucchini with remaining olive oil and seasoning.
  4. Arrange the chicken in the center of a sheet pan and scatter the vegetables around it.
  5. Roast in the oven for 25-30 minutes until chicken is cooked through and veggies are tender.
