  • 8 oz spaghetti or linguine
  • 1 lb large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 tbsp extra virgin olive oil
  • 1/2 cup white wine
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup fresh basil leaves, torn

Instructions

  1. Prep the shrimp by rinsing under cold water.
  2. Cook spaghetti or linguine in boiling salted water until al dente, according to package directions. Drain and reserve some pasta water.
  3. In a large skillet over medium heat, add olive oil and sauté garlic for about 30 seconds until fragrant.
  4. Add shrimp to skillet; cook for 3-4 minutes until pink and opaque.
  5. Stir in cherry tomatoes and white wine; simmer for about 5 minutes until tomatoes burst.
  6. Toss in the drained pasta; add reserved pasta water as needed to achieve desired sauce consistency.
