- 8 oz spaghetti or linguine
- 1 lb large shrimp, peeled and deveined
- 4 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 2 tbsp extra virgin olive oil
- 1/2 cup white wine
- 1/2 cup freshly grated Parmesan cheese
- 1/4 cup fresh basil leaves, torn
Instructions
- Prep the shrimp by rinsing under cold water.
- Cook spaghetti or linguine in boiling salted water until al dente, according to package directions. Drain and reserve some pasta water.
- In a large skillet over medium heat, add olive oil and sauté garlic for about 30 seconds until fragrant.
- Add shrimp to skillet; cook for 3-4 minutes until pink and opaque.
- Stir in cherry tomatoes and white wine; simmer for about 5 minutes until tomatoes burst.
- Toss in the drained pasta; add reserved pasta water as needed to achieve desired sauce consistency.
- Off heat, mix in Parmesan cheese and basil leaves before serving.
