- 4 cups mixed greens (spinach, arugula, romaine)
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced
- 1/4 medium red onion, thinly sliced
- 1/2 cup crumbled feta cheese
- 3 tablespoons extra virgin olive oil
- 2 tablespoons balsamic vinegar
- Salt & pepper to taste
Instructions
- Rinse mixed greens under cold water and dry using a salad spinner.
- Halve cherry tomatoes and dice cucumber into bite-sized pieces.
- Soak thinly sliced red onion in cold water for a milder flavor if desired.
- In a large bowl, combine mixed greens, tomatoes, cucumber, red onion, and feta cheese.
- In a small bowl or jar, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Drizzle dressing over the salad just before serving and toss gently to coat.
