Ingredients

  • 4 cups mixed greens (spinach, arugula, romaine)
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/4 medium red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • Salt & pepper to taste

Instructions

  1. Rinse mixed greens under cold water and dry using a salad spinner.
  2. Halve cherry tomatoes and dice cucumber into bite-sized pieces.
  3. Soak thinly sliced red onion in cold water for a milder flavor if desired.
  4. In a large bowl, combine mixed greens, tomatoes, cucumber, red onion, and feta cheese.
  5. In a small bowl or jar, whisk together olive oil, balsamic vinegar, salt, and pepper.
  6. Drizzle dressing over the salad just before serving and toss gently to coat.
