Ingredients
- 4 medium sweet potatoes (about 2 lbs)
 - 1/4 cup brown sugar
 - 1 tsp ground cinnamon
 - 1/4 cup unsalted butter
 - 1 1/2 cups mini marshmallows
 
Instructions
- Preheat the oven to 400°F (200°C). Wash sweet potatoes and pierce them with a fork.
 - Bake sweet potatoes directly on the oven rack or on a baking sheet for about 45 minutes until tender.
 - Let cool slightly, then cut and scoop out the flesh into a mixing bowl.
 - Add butter, brown sugar, cinnamon, and a pinch of salt to the sweet potato flesh; mash until smooth.
 - Transfer mixture to a greased baking dish and top with mini marshmallows.
 - Bake for an additional 10-15 minutes until marshmallows are golden brown.
