Ingredients

  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic, minced
  • 2 cups mixed vegetables (fresh or frozen)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1 cup breadcrumbs (preferably panko)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C). Grease a large baking dish.
  2. In a bowl, mix diced chicken, mixed vegetables, and minced garlic. Season with salt and pepper.
  3. Stir in cream of chicken soup until well combined.
  4. Fold in half of the shredded cheese and transfer the mixture to the baking dish.
  5. Top with remaining cheese and sprinkle breadcrumbs evenly.
  6. Bake for 30-35 minutes until the cheese is bubbly and golden brown.
