- 4 boneless, skinless chicken breasts (about 1 lb)
- 3 cloves fresh garlic, minced
- 2 cups mixed vegetables (fresh or frozen)
- 1 can (10.5 oz) cream of chicken soup
- 1 cup shredded cheddar cheese
- 1 cup breadcrumbs (preferably panko)
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C). Grease a large baking dish.
- In a bowl, mix diced chicken, mixed vegetables, and minced garlic. Season with salt and pepper.
- Stir in cream of chicken soup until well combined.
- Fold in half of the shredded cheese and transfer the mixture to the baking dish.
- Top with remaining cheese and sprinkle breadcrumbs evenly.
- Bake for 30-35 minutes until the cheese is bubbly and golden brown.
- Allow to cool slightly before serving.
