- 3 cloves fresh garlic, minced
- 1 cup low-sodium chicken broth
- 2 cups mixed vegetables (bell peppers, broccoli, carrots)

- Salt and pepper to taste
Instructions
- Preheat a skillet over medium heat; add olive oil.
- Season chicken breasts with salt and pepper. Sear in the skillet for 5-6 minutes on each side until golden brown.
- Add minced garlic to the skillet and cook for an additional 30 seconds until fragrant.
- Pour in chicken broth and add mixed vegetables. Bring to a simmer and cover the skillet with a lid.
- Cook for 15-20 minutes until chicken reaches an internal temperature of 165°F (75°C). Serve hot.
