- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 cup bell peppers, diced (any color)
- 1 can (14.5 oz) diced tomatoes with juice
- 1 tsp cumin
- 1 tsp paprika
- 1/2 cup sour cream (or Greek yogurt)
Instructions
- Prep your veggies by washing and chopping the onion and bell peppers.
- In a large skillet over medium-high heat, brown the ground beef for about 6-8 minutes, breaking it apart as it cooks.
- Add the chopped onion and garlic; sauté until the onion is translucent.
- Stir in the bell peppers and cook for an additional 5 minutes until tender.
- Mix in the canned tomatoes and spices; let simmer for 10 minutes to meld flavors.
- Serve hot with a dollop of sour cream on top.
