- 4 cups mixed greens (arugula, spinach, romaine)
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- 1 tsp dried oregano
Instructions
- Rinse all vegetables under cold water and dry them with a kitchen towel.
- Chop mixed greens into bite-sized pieces. Halve cherry tomatoes and slice cucumber.
- In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion.
- Sprinkle crumbled feta and dried oregano over the top.
- In a small bowl, whisk together olive oil and balsamic vinegar. Drizzle over the salad.
- Toss gently until everything is well combined and serve immediately.
