- 2 medium zucchinis (about 2 cups grated)
- 2 large eggs
- 1 cup seasoned breadcrumbs (or panko)
- 2 cloves garlic (minced)
- ½ cup grated parmesan cheese
- Salt and pepper (to taste)
- ¼ cup olive oil (for frying)
Instructions
- Wash and pat dry the zucchinis. Grate them using a box grater until you have about 2 cups.
- Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture to prevent sogginess.
- In a large bowl, combine grated zucchini, eggs, breadcrumbs, minced garlic, parmesan cheese, salt, and pepper. Mix until well combined.
- Heat olive oil in a non-stick skillet over medium heat until shimmering.
- Drop spoonfuls of the mixture into the hot oil and fry each side for about 3-4 minutes or until golden brown.
- Drain on paper towels before serving hot.
