  • 2 medium zucchinis (about 2 cups grated)
  • 2 large eggs
  • 1 cup seasoned breadcrumbs (or panko)
  • 2 cloves garlic (minced)

  • Salt and pepper (to taste)
  • ¼ cup olive oil (for frying)

Instructions

  1. Wash and pat dry the zucchinis. Grate them using a box grater until you have about 2 cups.
  2. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture to prevent sogginess.
  3. In a large bowl, combine grated zucchini, eggs, breadcrumbs, minced garlic, parmesan cheese, salt, and pepper. Mix until well combined.
  4. Heat olive oil in a non-stick skillet over medium heat until shimmering.
  5. Drop spoonfuls of the mixture into the hot oil and fry each side for about 3-4 minutes or until golden brown.
