- 4 large russet potatoes
- 2 tbsp olive oil
- 1 tsp kosher salt
- 4 tbsp unsalted butter
- 1 cup sour cream (or Greek yogurt)
- Assorted toppings: shredded cheese, chives, bacon bits
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and scrub the russet potatoes thoroughly; pat dry.
- Poke several holes in each potato using a fork to release steam.
- Rub olive oil over each potato and sprinkle with kosher salt.
- Place directly on the oven rack or on a baking sheet and bake for 45-60 minutes until soft.
- Remove from the oven, cool slightly, slice open, fluff insides with a fork, and add butter and your choice of toppings.
- Serve hot and enjoy!
