Ingredients

  • 4 large russet potatoes
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 4 tbsp unsalted butter
  • 1 cup sour cream (or Greek yogurt)
  • Assorted toppings: shredded cheese, chives, bacon bits

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and scrub the russet potatoes thoroughly; pat dry.
  3. Poke several holes in each potato using a fork to release steam.
  4. Rub olive oil over each potato and sprinkle with kosher salt.
  5. Place directly on the oven rack or on a baking sheet and bake for 45-60 minutes until soft.
  6. Remove from the oven, cool slightly, slice open, fluff insides with a fork, and add butter and your choice of toppings.
  7. Serve hot and enjoy!
