Instructions
- Preheat your oven to 350°F (175°C) or heat a skillet over medium heat.
- In a bowl, mash the ripe bananas until smooth but slightly chunky.
- In another bowl, whisk together flour, sugar, baking powder, and cinnamon.
- Create a well in the dry ingredients and add mashed bananas, eggs, milk, and vanilla extract. Stir gently until just combined.
- For pancakes: Ladle batter onto the skillet; cook until bubbles form before flipping. For bread: Pour the batter into a greased loaf pan.
- Bake for 25-35 minutes for bread or cook pancakes until golden brown.
