  • 1 cup bell peppers, chopped (mix of colors)
  • 1 cup broccoli florets (fresh or frozen)
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • ¼ cup low-sodium soy sauce
  • 2 tbsp sesame oil
  • 1 tbsp cornstarch
  • 2 cups cooked rice or noodles
  • 1 tbsp brown sugar
  • 1 tbsp rice vinegar
  • ½ tsp red pepper flakes (optional)

Instructions

  1. Prepare your ingredients by slicing the beef and chopping the vegetables.
  2. In a bowl, whisk together soy sauce, brown sugar, rice vinegar, and cornstarch until smooth; set aside.
  3. Heat sesame oil in a skillet over medium-high heat. Sear the beef in batches until browned (3-4 minutes), then set aside.
  4. In the same skillet, add garlic and ginger; stir-fry for about 30 seconds before adding bell peppers and broccoli. Cook for 4-5 minutes until vibrant but still crunchy.
  5. Return beef to the skillet and pour in the prepared sauce. Stir everything together and cook for another 2-3 minutes until coated and bubbling.
