- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 8 oz fresh cremini or button mushrooms, sliced
- 1 cup heavy cream
- 3 cloves garlic, minced
- 1 medium onion, diced
- 1 cup low-sodium chicken broth
- 2 tbsp olive oil
- 2 tsp fresh thyme or parsley, chopped

Instructions
- Prepare your ingredients by dicing the onion, mincing the garlic, and slicing the mushrooms.
- Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper. Sauté until golden brown on both sides, about 6–7 minutes per side.
- Add diced onions to the skillet once the chicken is browned. Sauté until translucent (3–4 minutes), then stir in minced garlic for another minute.
- Pour in chicken broth and bring to a gentle simmer. Stir in heavy cream until well combined.
- Fold sliced mushrooms into the creamy sauce and simmer until tender (5–7 minutes).
- Finish by garnishing with fresh thyme or parsley before serving.
