- 3–4 boneless, skinless chicken breasts
- 1 cup long-grain rice (jasmine or basmati)
- 1 medium onion, finely chopped
- 3 cloves fresh garlic, crushed
- 2 cups low-sodium chicken broth
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- Fresh parsley or cilantro for garnish
Instructions
- Prep your ingredients by chopping the onion and crushing the garlic.
- In a large pot, heat 2 tbsp olive oil over medium heat. Sauté onions until translucent; add garlic.
- Add chicken breasts and season with cumin, paprika, salt, and pepper. Sauté until golden brown on all sides.
- Stir in rice and chicken broth; bring to a gentle boil while stirring occasionally.
- Reduce heat to low, cover tightly, and simmer for about 20 minutes or until rice absorbs liquid.
- Remove from heat, fluff with a fork, stir in fresh herbs, and serve hot.
