- 3 tbsp soy sauce (low sodium recommended)
- 1 tbsp Dijon mustard
Instructions
- In a large bowl, whisk together olive oil, honey, soy sauce, mustard, lemon juice, minced garlic, salt, and pepper until well combined.
- Add chicken thighs to the marinade; coat well and let them marinate for at least 30 minutes.
- Preheat your oven to 425°F (220°C).
- Arrange marinated chicken thighs on a parchment-lined baking sheet, ensuring space between each piece.
- Roast for 35-40 minutes or until the internal temperature reaches 165°F (75°C).
- Let rest for about 5 minutes before serving.
