Instructions
- Preheat your oven to 425°F (220°C).
- In a bowl, combine olive oil, soy sauce, honey, minced garlic, lemon juice, salt, pepper, and herbs.
- Add the chicken thighs to the marinade and let them soak for at least 30 minutes.
- Arrange marinated thighs on a parchment-lined baking sheet, ensuring they're spaced out.
- Bake for 35-40 minutes until golden brown and internal temperature reaches 165°F (75°C).
- Allow to rest for 5 minutes before serving.
