- 1.5 lbs boneless chicken thighs
- 3 medium carrots, chopped
- 2 medium Yukon Gold potatoes, diced
- 1 large sweet onion, sliced
- 2 cups low-sodium chicken broth
- 1 tsp garlic powder

- ½ tsp black pepper
Instructions
- Prep your ingredients by chopping the carrots and potatoes into bite-sized pieces.
- In a skillet, brown the chicken thighs over medium heat for about 5 minutes on each side until golden.
- Add chopped carrots and potatoes to the slow cooker.
- Whisk together chicken broth, garlic powder, thyme, salt, and pepper; pour over the chicken and veggies.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until everything is tender.
- Serve hot from the crockpot.
