- 1 lb lean ground beef
- 2 medium sweet potatoes (about 1 lb), peeled and cubed
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 bell pepper (any color), diced
- 2 tsp cumin
- 2 tsp smoked paprika
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Prepare your vegetables by dicing the onion and bell pepper and cubing the sweet potatoes into bite-sized pieces.
- Heat olive oil in a large skillet over medium heat. Sauté the diced onions until translucent, then add minced garlic for flavor.
- Add the ground beef to the skillet, breaking it apart as it cooks. Season with cumin and smoked paprika, cooking until browned.
- Stir in the sweet potatoes and bell peppers, mixing well to coat with spices. Cook for about 15 minutes until sweet potatoes are tender.
- Taste and adjust seasoning before serving hot. Garnish with fresh herbs if desired.
