- 1 lb ground beef (80/20)
- 1 medium onion, diced
- 4 cloves garlic, minced
- 1 cup bell peppers, diced (mixed colors)
- 2 tsp cumin
- 2 tsp paprika
- 1 tsp chili powder
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup shredded cheese (cheddar or Monterey Jack)
Instructions
- Heat a large skillet over medium heat and add a splash of olive oil.
- Sauté the diced onions until translucent.
- Add ground beef, breaking it apart as it browns for about 6-8 minutes.
- Stir in minced garlic and chopped bell peppers; cook until peppers soften (about 3-4 minutes).
- Season with cumin, paprika, chili powder, salt, and pepper; mix well and let simmer for 2 minutes.
- Incorporate canned tomatoes and beans; simmer for an additional 10 minutes.
- Remove from heat and sprinkle shredded cheese on top; cover briefly until melted.
