- 1 lb ground beef (80/20 lean-to-fat ratio)
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 cup bell peppers, chopped (any color)
- 2 tsp cumin
- 2 tsp paprika
- 2 tsp chili powder
- 1 cup shredded cheddar or mozzarella cheese (optional)
- Fresh cilantro or parsley for garnish
Instructions
- Gather all ingredients and chop onions and bell peppers.
- Heat 1 tbsp olive oil in a large skillet over medium heat; sauté onions until translucent (about 5 minutes).
- Increase heat to medium-high, add ground beef; cook until browned (7-10 minutes), breaking it apart as it cooks.
- Stir in minced garlic, bell peppers, cumin, paprika, and chili powder; cook until peppers soften (around 4 minutes).
- Add canned tomatoes with juices and simmer for about 10 minutes to meld flavors.
- If desired, sprinkle cheese on top during the last 5 minutes of cooking; cover until melted.
