- 8 oz pasta (spaghetti or penne)
- 2 tbsp extra virgin olive oil
- 4 cloves garlic, minced
- 1 can (28 oz) whole peeled tomatoes
- Salt and pepper to taste
- ½ cup fresh basil leaves
- ½ cup grated Parmesan cheese
Instructions
- Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
- In a skillet over medium heat, heat olive oil and sauté minced garlic for 1-2 minutes until golden brown.
- Add the canned tomatoes (crushed by hand) and season with salt and pepper. Simmer for 10-15 minutes until sauce thickens.
- Toss the drained pasta into the skillet with the sauce, mixing well to coat.
- Stir in fresh basil and grated Parmesan cheese off the heat until combined.
- Serve hot, garnished with extra basil or cheese as desired.
