  • 8 oz pasta (spaghetti or penne)
  • 2 tbsp extra virgin olive oil
  • 4 cloves garlic, minced
  • 1 can (28 oz) whole peeled tomatoes
  • Salt and pepper to taste
  • ½ cup fresh basil leaves
  • ½ cup grated Parmesan cheese

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
  2. In a skillet over medium heat, heat olive oil and sauté minced garlic for 1-2 minutes until golden brown.
  3. Add the canned tomatoes (crushed by hand) and season with salt and pepper. Simmer for 10-15 minutes until sauce thickens.
  4. Toss the drained pasta into the skillet with the sauce, mixing well to coat.
  5. Stir in fresh basil and grated Parmesan cheese off the heat until combined.
