- 1 lb lean ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup high-quality tomato sauce
- 4 large bell peppers (any color), tops cut off and seeds removed
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried oregano
- 2 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, add olive oil. Once shimmering, sauté chopped onions and minced garlic for about 3 minutes until fragrant.
- Increase the heat slightly and add the ground beef. Cook for 5-7 minutes until browned, breaking it apart with a spatula.
- Stir in the tomato sauce, salt, pepper, and oregano. Let it simmer for approximately 10 minutes.
- While simmering, prepare the bell peppers by cutting off the tops and scooping out the seeds.
- Stuff each pepper with the beef mixture and place them in a baking dish upright.
- Cover with foil and bake for 30-35 minutes until the peppers are tender.
