  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup high-quality tomato sauce
  • 4 large bell peppers (any color), tops cut off and seeds removed
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, add olive oil. Once shimmering, sauté chopped onions and minced garlic for about 3 minutes until fragrant.
  3. Increase the heat slightly and add the ground beef. Cook for 5-7 minutes until browned, breaking it apart with a spatula.
  4. Stir in the tomato sauce, salt, pepper, and oregano. Let it simmer for approximately 10 minutes.
  5. While simmering, prepare the bell peppers by cutting off the tops and scooping out the seeds.
  6. Stuff each pepper with the beef mixture and place them in a baking dish upright.
  7. Cover with foil and bake for 30-35 minutes until the peppers are tender.
