 - 1 cup bell peppers, chopped (mixed colors)
 - 1 medium onion, diced
 - 3 cloves garlic, minced
 - 2 cups low-sodium chicken broth
 - 1 tbsp olive oil
 - 1 tsp paprika
 - 1 tsp dried oregano
 
Instructions
- Prepare your ingredients by chopping onions, bell peppers, and garlic.
 - In a large skillet over medium heat, add olive oil. Once hot, sauté the onions and bell peppers until softened.
 - Add sliced sausage to the skillet; cook until browned.
 - Stir in minced garlic, paprika, and oregano; cook for one minute until fragrant.
 - Add rinsed rice and pour in chicken broth; bring to a gentle simmer.
 - Cover tightly and reduce heat to low; cook for about 20 minutes or until rice is tender.
 - Fluff with a fork before serving.
