  • 1 cup long-grain rice (Basmati or Jasmine)
  • 3 cloves fresh garlic, minced
  • 2 cups vegetable broth
  • 2 tablespoons olive oil
  • 1/4 cup fresh parsley or cilantro, chopped
  • Zest of 1 lemon
  • Pinch of salt

Instructions

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan over medium heat, warm olive oil until shimmering. Add minced garlic and sauté for about 30 seconds.
  3. Add the rinsed rice to the pan and stir gently for about 2 minutes until slightly translucent.
  4. Pour in vegetable broth and a pinch of salt; bring to a boil while stirring occasionally.
  5. Once boiling, reduce heat to low, cover tightly, and simmer for 18-20 minutes without lifting the lid.
  6. Remove from heat and let sit covered for an additional 5 minutes. Fluff with a fork and stir in chopped herbs and lemon zest before serving.
