Ingredients

  • 3 lbs beef roast (ribeye or chuck)
  • 4 cloves garlic (minced)
  • 2 tbsp fresh thyme (chopped)
  • 2 tbsp fresh rosemary (chopped)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • Optional: 2 cups carrots, potatoes, and onions (for roasting)

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Rub the beef roast with olive oil, minced garlic, salt, pepper, thyme, and rosemary.
  3. Sear the roast on all sides in a hot skillet for about 3-4 minutes until browned.
  4. Place the roast in a roasting pan and add optional vegetables around it.
  5. Roast for 20 minutes at 450°F then reduce temperature to 325°F (163°C) and cook for approximately 1 hour for medium-rare.
  6. Remove from oven and let rest for 15-20 minutes before slicing.
