  • 2 tsp salt
  • 1 tsp black pepper
  • 2 sprigs fresh rosemary, chopped
  • 4 garlic cloves, crushed
  • 2 tbsp olive oil
  • 2 carrots, chopped
  • 1 onion, chopped

Instructions

  1. Preheat oven to 450°F (232°C) and prepare roasting pan.
  2. Season the beef roast generously with salt and pepper.
  3. Mix rosemary, garlic, and olive oil in a bowl to create a paste; coat the roast thoroughly.
  4. Place chopped carrots and onions at the bottom of the roasting pan.
  5. Set the roast on top of the veggies and roast for 20 minutes.
