- 3–4 lb beef roast
- 2 tsp salt
- 1 tsp black pepper
- 2 sprigs fresh rosemary, chopped
- 4 garlic cloves, crushed
- 2 tbsp olive oil
- 2 carrots, chopped
- 1 onion, chopped
Instructions
- Preheat oven to 450°F (232°C) and prepare roasting pan.
- Season the beef roast generously with salt and pepper.
- Mix rosemary, garlic, and olive oil in a bowl to create a paste; coat the roast thoroughly.
- Place chopped carrots and onions at the bottom of the roasting pan.
- Set the roast on top of the veggies and roast for 20 minutes.
- Reduce heat to 325°F (163°C) and cook for an additional 1-1.5 hours until desired doneness.
- Let rest for 15-20 minutes before slicing.
