Instructions
- Shred the rotisserie chicken into bite-sized pieces using two forks.
- In a skillet, heat olive oil over medium heat. Sauté diced vegetables until tender (about 5 minutes).
- Add shredded chicken to the skillet and season with cumin, paprika, salt, and pepper. Mix well.
- Stir in cheese and drizzle with barbecue sauce or salsa. Combine until heated through (about 3-4 minutes).
- Serve hot with tortillas, rice, or enjoy directly from the skillet.
