- 2 lb round steak, cut into 2-inch chunks
- 2 medium sweet onions, chopped
- 4 cloves garlic, minced
- 2 cups low-sodium beef broth
- 1 cup baby carrots
- 4 medium Yukon Gold potatoes, quartered
- 2 tsp fresh thyme
- 2 tsp fresh rosemary
- 1/4 cup low-sodium soy sauce
- Salt and pepper to taste
Instructions
- Sear the round steak chunks in a skillet over high heat for 3-4 minutes per side until browned.
- Place the seared beef in the crock pot and layer with chopped onions, garlic, carrots, and potatoes.
- Pour beef broth over the ingredients until they are just covered. Drizzle with soy sauce.
- Sprinkle thyme, rosemary, salt, and pepper generously on top.
- Cover and cook on low for 8 hours or high for 4 hours until meat is tender.
- Serve garnished with fresh herbs if desired.
