- 1/4 cup granulated sugar
- 1/4 tsp salt
- 1/2 cup unsalted butter (chilled, cubed)
- 3–4 tbsp ice water
- 2 large eggs (room temperature)
- 2 cups fresh fruit or filling of choice (e.g., berries, lemon curd)
- 1/4 cup sugar for filling (adjust based on fruit sweetness)
- 1 tbsp lemon juice or zest (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease a tart pan.
- In a mixing bowl, combine flour, sugar, and salt. Cut in chilled butter until crumbly.
- Gradually add ice water until dough forms; shape into a disk and chill for at least 30 minutes.
- Roll out dough on a floured surface to about 1/8-inch thickness and transfer to the tart pan.
- Prick the bottom of the crust with a fork and pre-bake for 15 minutes until lightly golden.
- Add your chosen filling evenly over the pre-baked crust.
- Bake again for 25-30 minutes until set and edges are lightly browned.
- Allow to cool before slicing; serve with whipped cream or ice cream if desired.
