- 1 lb baby potatoes, halved
- 3 tbsp olive oil
- 2 tsp fresh rosemary, chopped (or 1 tsp dried)
- ½ tsp salt
- ½ tsp pepper
- 1 cup mixed vegetables (e.g., bell peppers, onions)
Instructions
- Preheat your oven to 400°F (200°C).
- On a large sheet pan, drizzle olive oil generously.
- In a bowl, combine sausages and halved potatoes. Add olive oil, salt, pepper, and rosemary; toss until well-coated.
- Spread the mixture evenly on the prepared sheet pan.
- Roast in the oven for 30-35 minutes, stirring halfway through until the potatoes are fork-tender and golden brown.
- Serve hot with your favorite dipping sauce or on its own.
