- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 cloves fresh garlic, minced
- 1 can (10.5 oz) cream of chicken soup (low-sodium preferred)
- 2 cups frozen mixed vegetables
- 1 cup shredded cheddar cheese
- 1 cup breadcrumbs (plain or seasoned)
- Salt and pepper to taste
- 1 tsp onion powder
- 1 tsp paprika
Instructions
- Preheat oven to 350°F (175°C).
- Cube chicken breasts into bite-sized pieces and season with salt, pepper, onion powder, and paprika.
- In a large bowl, combine the seasoned chicken with cream of chicken soup and frozen mixed vegetables; mix well.
- Fold half of the shredded cheese into the mixture and transfer to a greased baking dish.
- Top with remaining cheese and sprinkle breadcrumbs over the casserole.
- Bake for 30-35 minutes until bubbly and golden brown.
- Let rest for 5-10 minutes before serving.
