Instructions
- Wash all vegetables under cool water. Dice the cucumbers into bite-sized pieces and halve the cherry tomatoes.
- In a large mixing bowl, combine the diced cucumbers, cherry tomatoes, sliced red onion, crumbled feta cheese, and olives. Toss gently to mix.
- Add chopped parsley for freshness and visual appeal.
- Drizzle olive oil and lemon juice over the mixture. Season with salt and pepper to taste; toss again until well combined.
