Ingredients

  • 1 can (14 oz) artichoke hearts, drained and rinsed
  • 2 tbsp extra virgin olive oil
  • 1 cup panko breadcrumbs
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Drain and rinse artichoke hearts under cold water; pat dry.
  3. In a bowl, mix olive oil, garlic powder, paprika, salt, and pepper. Toss in artichokes until fully coated.
  4. In another bowl, combine panko breadcrumbs and Parmesan cheese. Roll each coated artichoke heart in the mixture.
  5. Arrange on a parchment-lined baking sheet and bake for approximately 20 minutes until golden brown.
  6. Allow to cool slightly before serving with your favorite dipping sauce.
