- 4 boneless, skinless chicken breasts
- 2 large sweet potatoes (about 1.5 lbs), peeled and cubed
- 3 tbsp olive oil
- 2 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp fresh thyme (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, drizzle olive oil over the chicken breasts and season with garlic powder, paprika, salt, and pepper. Rub to coat evenly.
- Peel and cube sweet potatoes into 1-inch pieces.
- In a large bowl, toss sweet potatoes with olive oil, salt, pepper, and thyme until well coated.
- Spread the seasoned chicken and sweet potatoes on a parchment-lined baking sheet.
- Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C) and the sweet potatoes are tender.
