Ingredients
- 4 medium fresh beets
- 4 oz creamy goat cheese
- 1 cup raw walnuts (or toasted for extra flavor)
- 4 cups mixed greens (arugula and spinach recommended)
- 3 tbsp extra-virgin olive oil
- 2 tbsp balsamic vinegar
- 2 tbsp fresh herbs (parsley or dill), chopped
- Salt and black pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Wash the beets, trim greens, and wrap each in aluminum foil.
- Roast the wrapped beets on a baking sheet for about 45 minutes until tender. Allow cooling slightly before peeling.
- While beets cool, wash and dry mixed greens thoroughly.
- Whisk together olive oil, balsamic vinegar, salt, pepper, and herbs in a small bowl.
- Slice cooled beets into rounds or wedges. In a large salad bowl, combine mixed greens, sliced beets, crumbled goat cheese, walnuts, and drizzle with dressing. Toss gently to combine.
