Ingredients

  • 4 medium fresh beets
  • 4 oz creamy goat cheese
  • 1 cup raw walnuts (or toasted for extra flavor)
  • 4 cups mixed greens (arugula and spinach recommended)
  • 3 tbsp extra-virgin olive oil
  • 2 tbsp balsamic vinegar
  • 2 tbsp fresh herbs (parsley or dill), chopped
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Wash the beets, trim greens, and wrap each in aluminum foil.
  2. Roast the wrapped beets on a baking sheet for about 45 minutes until tender. Allow cooling slightly before peeling.
  3. While beets cool, wash and dry mixed greens thoroughly.
  4. Whisk together olive oil, balsamic vinegar, salt, pepper, and herbs in a small bowl.
  5. Slice cooled beets into rounds or wedges. In a large salad bowl, combine mixed greens, sliced beets, crumbled goat cheese, walnuts, and drizzle with dressing. Toss gently to combine.
