- 1/4 cup red onion, thinly sliced
- 1/3 cup toasted pecans or walnuts
- 3 tbsp balsamic vinegar
- 2 tbsp extra virgin olive oil
- Salt & pepper to taste
Instructions
- Wash the peaches thoroughly and slice them into wedges.
- In a large bowl, combine mixed greens with sliced red onion and toasted nuts; toss gently.
- Fold in peach wedges and crumbled feta cheese carefully.
- In a small bowl, whisk together balsamic vinegar, olive oil, salt, and pepper.
- Drizzle dressing over the salad mixture and toss gently until well coated.
- Serve immediately on a platter for optimal freshness.
