- 4 boneless, skinless chicken breasts (about 600g)
- 2 tbsp extra virgin olive oil
- 4 cloves fresh garlic, minced
- Juice of 1 lemon (about 2 tbsp)
- 2 tsp fresh thyme or rosemary (or 1 tsp dried)
- Salt and pepper to taste
Instructions
- Preheat skillet over medium-high heat.
- Rinse chicken breasts under cold water and pat dry with paper towels. Season both sides with salt and pepper.
- In a bowl, whisk together olive oil, minced garlic, lemon juice, and herbs.
- Marinate chicken in the mixture for at least 30 minutes in the fridge.
- Add a drizzle of olive oil to the hot skillet and cook marinated chicken for 5-7 minutes on one side until golden brown.
- Flip the chicken and cook until fully cooked through (165°F internal temperature).
- Remove from heat and let rest for 5 minutes before slicing.
