  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 cup low-sodium chicken broth
  • 8 tortillas (corn or flour)
  • 1 cup fresh cilantro, chopped
  • Juice of 2 limes
  • Toppings: sour cream, diced tomatoes, avocado slices (as desired)

Instructions

  1. Place chicken breasts in a slow cooker; season with salt and pepper.
  2. Add minced garlic, cumin, and chili powder. Pour in chicken broth until the chicken is just covered.
  3. Cook on low for 6 hours or high for 3 hours until tender.
  4. Shred the chicken with two forks and return it to the broth.
  5. Warm tortillas on a skillet for about 30 seconds on each side.
  6. Assemble tacos by filling tortillas with shredded chicken and topping with cilantro, lime juice, and other desired toppings.
