- 4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 2 tsp cumin
- 2 tsp chili powder
- 1 cup low-sodium chicken broth
- 8 tortillas (corn or flour)
- 1 cup fresh cilantro, chopped
- Juice of 2 limes
- Toppings: sour cream, diced tomatoes, avocado slices (as desired)
Instructions
- Place chicken breasts in a slow cooker; season with salt and pepper.
- Add minced garlic, cumin, and chili powder. Pour in chicken broth until the chicken is just covered.
- Cook on low for 6 hours or high for 3 hours until tender.
- Shred the chicken with two forks and return it to the broth.
- Warm tortillas on a skillet for about 30 seconds on each side.
- Assemble tacos by filling tortillas with shredded chicken and topping with cilantro, lime juice, and other desired toppings.
